Italian Rice Salad (Insalata di Riso)

Instructions

1. Cook and cool the rice

  1. Rinse the basmati until the water runs (mostly) clear, then bring a large pot of well-salted water to a boil and cook it following the package timing, minus 1 minute — you want it al dente.
  2. Drain, rinse briefly under cold water to stop the cooking, then spread it on a tray to cool.
  3. While it is still slightly warm, toss with 1 tbsp of the olive oil so the grains stay separate and don’t stick.

2. Prep the rest

  1. Drain the tuna, corn, artichokes, gherkins, cocktail onions, and capers — excess liquid will water the salad down.
  2. Quarter the artichoke hearts, slice the gherkins, halve the cocktail onions if large, and dice the bell pepper.
  3. Halve the cherry tomatoes, halve the olives, and slice the red onion.
  4. Halve the ciliegine (or dice a whole mozzarella ball).

3. Combine

  1. In a large bowl, combine the cooled rice, tuna, artichokes, bell pepper, gherkins, cocktail onions, olives, capers, corn, tomatoes, red onion, and torn basil leaves.
  2. Add the remaining 3 tbsp olive oil and the lemon juice.
  3. Season with salt and pepper — go easy on the salt: capers, olives, and pickles are already salty.
  4. Toss gently so the rice doesn’t break up and the tuna doesn’t turn to mush.

4. Rest and serve

  1. Let the salad rest in the fridge for at least 30 minutes so the flavors meld.
  2. Taste before serving — cold rice absorbs dressing, so it may need an extra drizzle of oil and a squeeze of lemon.
  3. Serve cold or at room temperature, with a few extra basil leaves on top.
