Chicken Quesadillas

Instructions

1. Cook the chicken

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, season with cumin, chili powder, garlic powder, salt, and pepper.
  3. Cook 5–6 minutes until golden and cooked through.
  4. Remove from heat and set aside.

2. Cook the onion and pepper

  1. In the same skillet, add a splash more oil if needed.
  2. Add the sliced onion and bell pepper.
  3. Cook 4–5 minutes over medium heat until softened and slightly charred.
  4. Remove from heat and combine with the chicken.

3. Assemble the quesadillas

  1. Lay a tortilla flat on a clean surface.
  2. Sprinkle a layer of shredded cheese on one half of the tortilla.
  3. Spoon about 1/4 of the chicken and pepper mixture on top of the cheese.
  4. Sprinkle more cheese on top of the filling — the cheese is what holds it together.
  5. Fold the empty half over the filled half, pressing gently.

4. Cook the quesadillas

  1. Wipe out the skillet if needed, or use a clean one. No oil needed — dry skillet works best.
  2. Place the folded quesadilla in the skillet over medium heat.
  3. Cook 2–3 minutes on the first side until golden and crispy.
  4. Carefully flip and cook 2–3 minutes on the other side until the cheese is fully melted and the tortilla is golden.
  5. Repeat with the remaining quesadillas.

5. Serve

  1. Let rest 1–2 minutes so the cheese sets slightly.
  2. Cut each quesadilla into 2–3 triangles.
  3. Serve with sour cream, salsa, guacamole, cilantro, and lime wedges.

Vegetarian Variation

Omit the chicken and use one of these as the filling instead:
