Instructions

1. Toast the bread

  1. Toast the bread to your liking.
  2. Set aside.

2. Beat the eggs

  1. Crack the eggs into a bowl.
  2. Add the milk or cream (if using), a pinch of salt, and pepper.
  3. Beat with a fork until combined — don’t overdo it, 10 seconds is enough.

3. Cook the eggs

  1. Heat 1 tbsp butter in a non-stick pan over medium-low heat.
  2. Let the butter melt and foam, but don’t let it brown.
  3. Pour in the eggs.
  4. Wait 10–15 seconds until the edges just start to set.
  5. Using a spatula, gently push the eggs from the edges toward the center, creating soft curds.
  6. Keep folding gently — don’t stir vigorously.
  7. Cook for 1–2 minutes total. Remove from heat while they’re still slightly wet — they’ll keep cooking from residual heat.

4. Assemble

  1. Place the toast on a plate.
  2. Spoon the scrambled eggs on top.
  3. Add any toppings you like.
  4. Eat immediately.
