Ingredients
- 2 large eggs
- 1 tbsp milk or cream (optional — makes them fluffier)
- 1 tbsp butter (or olive oil)
- 2 slices bread (sourdough, whole wheat, or whatever you have)
- Salt and pepper
Optional toppings:
- Sliced avocado
- A handful of spinach or arugula
- Chili flakes
- Grated cheese (cheddar, feta, or Parmesan)
- Smoked salmon
- Sliced tomato
- Hot sauce
Instructions
1. Toast the bread
- Toast the bread to your liking.
- Set aside.
2. Beat the eggs
- Crack the eggs into a bowl.
- Add the milk or cream (if using), a pinch of salt, and pepper.
- Beat with a fork until combined — don’t overdo it, 10 seconds is enough.
3. Cook the eggs
- Heat 1 tbsp butter in a non-stick pan over medium-low heat.
- Let the butter melt and foam, but don’t let it brown.
- Pour in the eggs.
- Wait 10–15 seconds until the edges just start to set.
- Using a spatula, gently push the eggs from the edges toward the center, creating soft curds.
- Keep folding gently — don’t stir vigorously.
- Cook for 1–2 minutes total. Remove from heat while they’re still slightly wet — they’ll keep cooking from residual heat.
4. Assemble
- Place the toast on a plate.
- Spoon the scrambled eggs on top.
- Add any toppings you like.
- Eat immediately.
Tips
- Low and slow. Medium-low heat and patience = soft, creamy eggs. High heat = rubbery eggs.
- Take them off early. They should look slightly underdone when you remove from heat — they finish cooking on the plate. Wet eggs are better than dry eggs.
- Butter > oil. Butter gives flavor. Olive oil works, but butter is the classic choice.
- Don’t overbeat. A quick fork whisk is enough. Overbeaten eggs become dense.
