Sponge Cake (Rice Cooker)

Made in a Toshiba rice cooker using the Cake setting. A versatile base for tiramisu, trifle, shortcake, or enjoyed on its own.
Ingredients
- 3 eggs
- 150g sugar
- 150g self-raising flour (or plain flour + 1.5 tsp baking powder)
- 150g softened butter (or vegetable oil for a lighter texture)
- 1 tsp vanilla extract
- Pinch of salt
Method
- All ingredients at room temperature
- Beat butter and sugar until creamy
- Add vanilla, then eggs one at a time, mixing well
- Fold in flour and salt gently — do not overmix
- Grease the rice cooker inner pot well (or line with baking paper)
- Pour in batter and tap the pot on the counter to remove air bubbles
- Select the Cake menu and press start
- When done, check with a skewer — if not cooked through, run another cycle
- Let cool for 10 min before turning out
Tips
- For tiramisu: slice thin and dip very quickly in espresso (don’t soak)
- For shortcake: slice in half, add whipped cream and fresh fruit
- Add lemon zest, cocoa powder, or berries for variations
- If your rice cooker doesn’t have a Cake setting, the standard Cook cycle works too
